Look what I found! Just when I thought all was lost when I got that stupid guest account bug, I found something in my hard drive. I really should look for the original CDs of this one.

We were all over the world and this was “going out” group in CIA, along with our mentor, Delores Custer. I really had a great time here! I think everyone should experience an American education. CIA was just the Hogwarts of Chefs! I froze when I met the roster of classmates I had, one was turkish working at Wall’s, one was japanese with her own resto, one was a r&d chef at a prestigious university, and here i was…fresh out culinary school just hoping that this was for me.

At Denise Vivaldo’s I was with Pixie Sevilla-Santos, who happens to be one of the Philippines’ top pastry chefs. I was also with other food stylists going on refresher, and a really cool food blogger…

Those were the days. I didn’t even have a day job yet and I was on an extended vacation. Haha!

My Dad’s Woodfired Oven: Sunday Dinner # 1

dad: the happy new owner of the ovenMy dad finally purchased his very own wood-fired oven around two months ago. Since then we’ve been having wood-fired oven dinners for the past weeks. Our pizzas and breads have gone from scientific to artisan. Despite the pugon smell that can’t get off your clothes and the first few weeks of teary eyes because of the smoke, my dad’s new toy was the most exciting thing that’s happened to our Sunday dinners this year (and our dinners are very exciting without the oven mind you). No, we haven’t decided if we would open these lovely pizzas and creations to the public. For now, you could just hope and pray that you get invited to one of the private dinners.

For week 1 our menu was like this:

Artisan breads with Turkish Olive Oil, Sea Salt and Aged Balsamic Vinegar

- this bread had a crunchy exterior and a soft, warm inside..some were not so crunchy in the exterior but was nice and soft.

Big C Food Court: Hawker-Quality Food Minus Doubts

Ever since Big C in Bangkok opened, it would always be our first destination on our first lunch during our yearly trips. Big C is a huge supermarket with a really really mind-blowing section on fresh food, cooked food and beauty products. In fact, I think Big C has become one of the models for supermarkets such as SM Hypermart and Shopwise, where it even has a second floor for clothes, appliances, home and office equipment and even hardware.

Big C has a lovely Thai food court, with lots of hawker quality food in it…so I think that for those who find it quite awkward to eat amongst the walking passengers and passing buses,  this is the perfect place to get the closest grub you can get from the hawkers outside.

Everytime we have our first lunch, we always start off with the usual: Som Tam or Papaya Salad, and yes, we eat the ones with the raw crab in it…though we’ve been warned by our Filipino friends that people can actually die from the bacteria in the crab…nothing beats a fiery plate of Som Tam Poo, which is Papaya Salad with Crab. They have the authentic Thai spiciness, as well as the mix and seasonings used. Topped with peanuts and mixed with a little beans and tomato, this is one of the things we can always look forward to on our first lunch.

New Look

I’m not really sure if I should change the look of my blog.I just realized I’ve been blogging for more than a year already, and I started with mostly food entries. Now I’m writing more about work…but it’s still pretty much food related. So what do you think about this new look?

Filipino Dinner with Delores Custer

Delores is here again and I wanted to really see her! She just finished her food styling seminar in Sofitel which was a big success. Everytime she’s in the country, dad always sets up a dinner (Delores always remembers us as the 2 generations who took her classes in CIA, which is a first for her) for her. This time, dad set up an all-Filipino dinner with our favorite dishes and things that are solely done here in the Philippines. Tita Omay (Norma Chickiamco) and Delores came from Bangkok, where they took classes on Thai cuisine (these two are pretty tight really).

Delores is currently working on her Food Styling book which will be coming out next year.  I am thinking that this will be the ultimate manual for those who really want to pursue the career. She will also be putting all sorts of short stories and her past students’ works from her food styling classes. Also a writer, she is also planning to come out with a book about preserving old family recipes. She asked us if any of us were blogging and I told her about my blog.
